MACH-III ultrasonic cutter

The high-speed Mach-III ultrasonic slicer is designed to achieve precise cuts of long cheese bars. These bars, generally produced from 320 kg blocks of cheese, are automatically supplied by our X-11 secondary cutters. 3D cameras make it possible to precisely measure the dimensions of the cheese bar, this data is directed to the processor, in order to produce precise weight cuts. A dynamic balance located downstream validates our population density

Cheese cutting technology with precise weight control

The control technology is of the “ALLEN BRADLEY” brand. It includes a user-friendly operator interface provided with graphics facilitating operations. Programmable “KINETIC” motor controllers control the two main axes: the indexing of the cutting conveyor and the guillotine propulsion unit. Software which has been developed by COPRODEV PLUS optimizes the control of fixed weights by taking into account laser measurements and data produced by the balance.
In short, the ultrasonic cheese cutting technology is particularly interesting for fragile or sticky products: soft bars, caramel, pastry, confectionery, etc. Many conclusive tests were carried out in our laboratory with fresh cheeses of the day.
